Seafood paella is more than a vibrant, flavourful dish — it is a culinary symbol of heritage, craftsmanship, and togetherness. Originating from Valencia, Spain, paella began as a humble farmer's meal cooked over open fires in wide, shallow pans. Traditionally made with rabbit, chicken, and beans, the dish evolved over centuries as coastal communities adapted it using the fresh seafood on their doorstep. The result is the now-beloved seafood paella: rich in flavour, striking in presentation, and steeped in history.
The Art of Preparation
The preparation of seafood paella is both an art and a ritual. At its heart lies the socarrat — the prized crispy layer of rice formed at the bottom of the pan. Achieving it demands precise heat control and patience.
The process unfolds in careful stages:
Aromatics first — garlic, onions, and tomatoes are sautéed to build a deep, savoury base
Short-grain rice is added next, chosen for its ability to absorb liquid beautifully without turning mushy
